Buying direct in British Columbia: what to know
Vancouver's cheat code is Pasture to Plate: a certified-organic Chilcotin ranch with its own whole-animal butcher shop on Commercial Drive. Spray Creek Ranch delivers down the Sea-to-Sky, and Big Bear Ranch runs monthly deliveries to the Lower Mainland, Okanagan and Prince George. Vancouver Island might be the best-fed place in Canada per capita: Berryman Brothers and Parry Bay around Victoria, Cowichan Valley Farms and Promise Valley (A2 dairy) in Duncan, Springford Farm up in Nanoose Bay, Yellow Point Farms in Ladysmith. In the Okanagan, start with Fresh Valley Farms in Armstrong.
How buying from a farm works (if you never have)
Most of these farms sell three ways: individual cuts from an online store (easiest start), bundle boxes (best variety per dollar), and bulk shares: a quarter, half or whole animal, by far the best price per pound if you have freezer space. A quarter beef fits in a 7 cu ft chest freezer. Order on the farm's website, and don't be shy about emailing the farmer with questions. They answer, usually personally, usually fast.
The part of the animal your farm order won’t include
Here is what happens with almost every quarter- or half-beef order in British Columbia. You get steaks, roasts and ground. You do not get the liver, the heart or the kidney: the three most nutrient-dense cuts on the animal. They are left at the abattoir, or they come home and sit in the freezer until someone quietly throws them out. Ask a farmer and most will tell you the same thing: they can rarely give organs away, because almost nobody asks for them.
That is the gap worth naming. You did the hard part: found the farm, checked how the cattle are actually finished, committed to the freezer space and the up-front cost. And the single thing that most separates pasture-raised from supermarket beef still never reaches the plate.
If your farm will sell you organs, take them. Genuinely. Fresh liver from a farm you have vetted yourself is the best version of this, and it is usually the cheapest protein on the price list. Ask for the liver, heart and kidney when you book. Most farms are glad someone finally did.
If they will not part with them, or the taste and the once-a-year timing are the real barriers, that is the narrow problem we make a product for. Is raw milk legal in Canada?
No. Selling raw (unpasteurized) milk is illegal across Canada. The closest legal option is non-homogenized, vat-pasteurized or A2 whole milk from pasture-based dairies like Promise Valley Farm, which preserves most of what raw-milk seekers are after.
How much does buying a quarter cow cost?
Most farms price bulk beef by hanging weight, and a quarter typically yields 80–110 lb of cut-and-wrapped beef, enough to fill a 7 cu ft chest freezer. Per-pound it works out well below retail for the same quality. Exact prices are on each farm's site; many take deposits and sell out months ahead, so book early.
What does 'regenerative' actually mean on a British Columbia farm?
In practice: animals raised on pasture their whole lives, moved frequently (rotational or adaptive grazing) so the land recovers and improves, without routine antibiotics or added hormones. Labels vary: 'grass-fed and grass-finished,' 'certified organic,' 'Certified Grassfed by AGW.' Read how each farm describes finishing, and ask them directly. Real farmers love this question.
