Homemade Fruit Gummies with Grass-Fed Gelatin

Jujubes maison à la gélatine, petits cubes rouges et ambrés dans un bol

Store gummies are sugar, corn syrup and colouring. Homemade gummies are fruit juice set with gelatin, and they take ten minutes.

Ingredients (about 40 small gummies)

  • 250 ml (1 cup) fruit juice, not pineapple or kiwi (their enzymes stop gelatin from setting)
  • 45 ml (3 tbsp) grass-fed bovine gelatin powder
  • 15 to 30 ml (1 to 2 tbsp) honey or maple syrup, to taste
  • A squeeze of lemon

Method

  1. Pour 60 ml (1/4 cup) of the cold juice into a bowl and sprinkle the gelatin over it. Let it bloom 5 minutes until wrinkled.
  2. Warm the remaining juice with the honey until steaming, not boiling. Whisk in the bloomed gelatin until fully dissolved. Add the lemon.
  3. Pour into silicone moulds or a small lined dish. Refrigerate 1 hour, then unmould or cut into cubes.

Keeps one week refrigerated. For firmer gummies add another tablespoon of gelatin. Our Grass-Fed Gelatin Powder is one ingredient, unflavoured, and blooms cleanly.
