Short answer: sprinkle gelatin over cold liquid, let it bloom for about 5 minutes, then dissolve it in hot (not boiling) liquid and chill. As a starting point, about 7 g (2 1/2 teaspoons) gives a soft set in 2 cups (500 ml) of liquid; use more for firmer gummies. Collagen peptides will not gel; gelatin will.

Step by step
- Pour a little cold water or juice into a bowl and sprinkle the gelatin evenly over the top.
- Wait about 5 minutes until it looks wrinkly and spongy (this is the bloom).
- Add hot liquid and stir until fully clear. Do not boil: high heat weakens the set.
- Pour into a mould or dish and chill until firm.
How much gelatin for what
| Result | Gelatin | Liquid | Source |
|---|---|---|---|
| Soft set (jelly) | 1 envelope, about 7 g (2 1/2 tsp) | 2 cups (500 ml) | Knox Canada directions |
| Firm set | 2 envelopes, about 14 g | 3 cups | Knox Canada directions |
| Standard set | 1 tbsp (about 12 g), bloomed in 1/2 cup cold water | plus 1 1/2 cups very hot liquid | Great Lakes directions |
| Gummies | Several tablespoons per cup | Juice or tea | Start firm and adjust |
Gelatins differ in strength, so treat these as starting points and adjust to your brand.
What “bloom” means
Bloom is a lab measure of gel strength: the force needed to press a plunger into a standard gel. Higher bloom sets firmer with less powder. Great Lakes states 225 bloom for its beef gelatin. If your bag does not state bloom, start with the amounts above and adjust.
What stops gelatin from setting
- Fresh pineapple, kiwi, papaya, figs and ginger contain enzymes that break down gelatin. Cook or use canned versions.
- Boiling the gelatin.
- Too little gelatin for the amount of liquid or acid.
Other everyday uses
- Stir a tablespoon into hot broth or soup.
- Add to warm coffee or tea; it will thicken as it cools.
- Use collagen peptides instead if you want something that dissolves in cold drinks without gelling.
