Scientists recognized a rare natural experiment taking shape and built a project around it: the Tokelau Island Migrant Study, one of the most carefully documented migrations in the history of nutrition science. It tracked the same people and the same bloodlines across two worlds: those who stayed on the atolls, and those who moved to the mainland and its supermarkets. For years the researchers measured weights, blood pressures, blood sugar, the quiet arithmetic of a body meeting a new diet.

The results were not subtle. As families settled into New Zealand and their meals shifted toward bread, sugar, processed meat, and sweetened drinks, their bodies changed. Weight climbed. Same ancestry. Same inherited risks. The variable that moved was not their blood. It was the food supply. The coconut, so long condemned as a saturated-fat villain, had never been the problem; the disease arrived with sugar and refined flour, not before them. Their bodies had not failed.
