Egg white protein behaves like a fresh egg white in batter: it sets with heat and gives waffles a light, crisp structure. This batter adds about 20 g of protein per waffle without any gritty protein-powder taste.
Ingredients (4 waffles)
- 60 g (about 2 scoops) egg white protein powder
- 125 ml (1/2 cup) all-purpose or oat flour
- 5 ml (1 tsp) baking powder
- A pinch of salt
- 2 eggs
- 175 ml (3/4 cup) milk
- 30 ml (2 tbsp) melted butter, plus more for the iron
- 15 ml (1 tbsp) maple syrup
- 5 ml (1 tsp) vanilla
Method
- Heat the waffle iron and brush it with butter.
- Whisk the protein powder, flour, baking powder and salt in a bowl.
- In another bowl whisk the eggs, milk, melted butter, maple syrup and vanilla. Pour into the dry ingredients and whisk just until smooth. Let stand 3 minutes.
- Pour about 125 ml (1/2 cup) batter onto the iron and cook until golden and crisp, about 4 minutes.
- Serve with berries and maple syrup, or cool and freeze.
Notes
- Freeze cooled waffles in a bag and reheat in the toaster.
- For a dairy-free version, use a plant milk and coconut oil.
