Buying direct in Nova Scotia: what to know

Halifax is better served than most Haligonians realize: Getaway Farm runs its own butcher shop in the city, Bountywoods does Halifax-area pickups from the Valley, Sweet Earth delivers from Tatamagouche, and MacDougall Meadows covers Halifax and the South Shore. In the Valley itself, Longspell Point sells through the Wolfville Farmers Market (and WFM2Go online), with Windy View handling weekday farm pickup in Kingston. Around Truro, Wild Pasture Farm's on-farm store and Truro market stand are the move.

How buying from a farm works (if you never have)

Most of these farms sell three ways: individual cuts from an online store (easiest start), bundle boxes (best variety per dollar), and bulk shares: a quarter, half or whole animal, by far the best price per pound if you have freezer space. A quarter beef fits in a 7 cu ft chest freezer. Order on the farm's website, and don't be shy about emailing the farmer with questions. They answer, usually personally, usually fast.

The part of the animal your farm order won’t include

Here is what happens with almost every quarter- or half-beef order in Nova Scotia. You get steaks, roasts and ground. You do not get the liver, the heart or the kidney: the three most nutrient-dense cuts on the animal. They are left at the abattoir, or they come home and sit in the freezer until someone quietly throws them out. Ask a farmer and most will tell you the same thing: they can rarely give organs away, because almost nobody asks for them.

That is the gap worth naming. You did the hard part: found the farm, checked how the cattle are actually finished, committed to the freezer space and the up-front cost. And the single thing that most separates pasture-raised from supermarket beef still never reaches the plate.

If your farm will sell you organs, take them. Genuinely. Fresh liver from a farm you have vetted yourself is the best version of this, and it is usually the cheapest protein on the price list. Ask for the liver, heart and kidney when you book. Most farms are glad someone finally did.

If they will not part with them, or the taste and the once-a-year timing are the real barriers, that is the narrow problem we make a product for. What does 'regenerative' actually mean on a Nova Scotia farm?
